Hoy, who also won a gold in the 1km time trial in Athens four years ago, becomes only the second Briton, after swimmer Henry Taylor in 1908, to win three golds at one Olympics.
Speaking afterwards to the BBC, he admitted: "When you cross the line, all the pressure that has built up, the expectation and the self doubt evaporates just like that.
"When you want something that much and the hours you put in, it is an amazing feeling when you achieve it."
The Scotsman's gold was the last to be won at the velodrome and it means that Britain have won seven gold medals in the indoor cycling.
